As this week’s ”Eats” review indicates, Terra Mediterranean Grill served some of the best Greek and Middle Eastern food I’ve had in a while. On the menu I discovered a fantastically firm white cheese that’s popular around the Mediterranean – haloumi. This sheep and goat’s milk creation originated on the island of Cyprus. Terra’s appetizer version is pan-seared with olive oil – the result was rich, salty, and vaguely reminded me of a cheesy flat bread or griddle cake. According to this search page, haloumi is a popular ingredient in off-beat grilled cheese sandwiches with various veggie toppings – an idea I plan to try as soon as my fingers lift from this keyboard.
